2/3 c. butter 1/2 c. fine dry breadcrumbs 2 tbsp. grated Parmesan cheese 1 tsp. basil leaves 1 tsp. oregano leaves 1/2 tsp. garlic salt 2 chicken breasts, split and boned 1/4 c. dry white wine or apple juice 1/4 c. chopped onion or onion flakes 1/4 c. chopped parsley Preheat oven to 375 degrees. Melt butter. On a piece of wax paper, combine bread crumbs, Parmesan cheese, basil, oregano, garlic salt. Dip chicken breasts in melted butter then roll in bread crumbs to coat. Place on ungreased 9 inch square baking dish and bake in oven at 350 degrees for 50 to 60 minutes until brown and chicken is tender. Meanwhile add wine and onion and parsley to remaining butter. After chicken is done pour butter mixture over. Return to oven for 3 to 5 minutes until sauce is hot. |
