10 c. apples 6 c. sugar 1/4 c. vinegar 3 tsp. cinnamon Peel, quarter and core and cook enough apples to make 12 cups. Put apples through ricer before measuring. Put apples through ricer before measuring. It should be thick like applesauce. In 3 1/2 quart crock pot put all above ingredients. Cook on high in crock pot. When cooked down, add the 2 remaining cups apples, riced or mashed. Now place crock pot switch on low. Cook all night (or all day). After cooking all 12 hours on low, turn switch back on high; tilt lid so steam can escape. Cook 20 to 24 hours. Can in sterilized jars. Yield: 5 pints. VARIATION: 2 (50 oz.) jars White House Applesauce (unsweetened) 4 c. sugar 1/4 c. + 2 tsp. vinegar 3 tsp. ground cinnamon Start on high, turn to low, cook all day and overnight. Turn to high last 2 to 3 hours to thicken up; then turn back to low until thick. Total time 1 1/2 days. |
