1 lg. can (16 oz.) whole tomatoes 1 med. onion, cut in strips 6-8 jalapenos, toasted, chopped fine 2 lbs. Velveeta cheese Place tomatoes in 4 quart pot, crush whole tomatoes with hand. Add strips of onions and simmer for 30-40 minutes, stirring occasionally to keep from sticking. Chop up jalapenos very fine and add tomatoes and lower heat to warm. (All this done after tomatoes and onions have been simmering for 30 to 40 minutes. Add Velveeta cheese, cut up in small sections. Don't stir mixture until cheese is melted, about 5-10 minutes. Stir everything and serve with tostados. Makes a large amount. |
