SWEDISH MEATBALLS 
1 lb. lean ground beef
1 sm. grated onion, preferably red
1 tsp. salt
1-1 1/2 tsp. ground allspice
1 egg yolk
1/2 c. unsweetened bread soaked in 1/2 cup hot water
Butter for frying

Combine ground beef, onion, salt, allspice, egg yolk and soaked bread. Mix thoroughly until smooth. Shape one small meat ball and fry in skillet to check taste. Fry the meat balls at moderate heat, not too many at a time. By shaking the skillet now and then meat balls will retain their round shape and will brown evenly on all sides. Serve with mashed potatoes and lingonberry or cranberry preserves.
