GERMAN POTATO WHEAT BREAD 
1 pt. warm milk
2-3 blocks yeast
1 lb. wheat flour
1/2 lb. butter
4-5 c. mashed potatoes
1 lemon rind, grated
1 1/2 oz. bitter almond (opt.)
2 1/2 oz. sugar
Pinch cardamom
3 lbs. wheat flour
1 egg, beaten

Dissolve yeast in warm milk and then add 1 lb. flour, mixing well and let rise. Cook mushy potatoes, peel and mash. Beat in butter. Add bitter almond, lemon rind from 1 lemon; 2 sugar and a pinch of cardamom. Add 1 bowl of potatoes to the butter. Add 3 pounds wheat flour. Work the dough well and let it rise a second time in a big bowl. Then make loaves of bread and let rise and brush with 1 beaten egg before baking.

Bake at 300 to 350°F for 1 hour.
