QUICHE LORRAINE | |
9" frozen pie shell 12 slices bacon, crisply fried & crumbled 1 c. shredded Swiss or cheddar cheese 1/3 finely chopped onion 4 eggs 2 c. half and half 3/4 tsp. salt 1/4 tsp. black pepper 1/8 tsp. cayenne pepper Sprinkle bacon, cheese and onion in pie shell. Beat eggs slightly, beat in remaining ingredients. Pour egg mixture into pie shell over cheese mixture. Cook, uncovered at 425 degrees for 15 minutes. Reduce oven temperature to 300 degrees. Cook, uncovered until knife inserted comes out clean, about 30 minutes. Let stand 10 minutes before cutting. Serves 6. |
