STUFFED ZUCCHINI 
5 lg. zucchini
2 tbsp. onion, chopped
1/2 c. sausage, cooked (Italian turkey)
3 tbsp. butter
1 c. soft fresh bread crumbs
Salt & pepper
Grated cheese (Parmesan)

Cook zucchini in boiling water 10 minutes (don't overcook as skins become too limp). Cut top third lengthwise, carefully spoon to hollow out pulp. Leave shell intact. Mix pulp with other ingredients. Fill shells. Bake at 350 degrees for 15 minutes.
