APPLE WALNUT CAKE 
4 c. coarsely cut apples
2 tbsp. vanilla
1 1/2 c. sugar
2 c. flour
2 eggs
2 tbsp. baking soda
1/2 c. Crisco
1 tsp. salt
1/2 c. chopped walnuts
2 tsp. cinnamon

Preheat oven to 350 degrees. Combine apples and sugar; set aside. In large bowl, beat for 1 minute the eggs, oil, and vanilla. Combine dry ingredients and alternate with apple mixture. Stir in walnuts. Grease and flour a 13 x 9 x 2 inch pan. Bake for 40 to 50 minutes. Do not overbake.

LEMON GLAZE:

1 c. confectioners' sugar
1 1/2 tbsp. lemon juice
1/2 tsp. vanilla
1 tbsp. white corn syrup

Drizzle over cooled cake.
