CHICKEN AND DIRTY RICE 
1/2 c. oil
Fryer
Onion
Celery
4 cloves garlic
Rice
Water

Brown chicken in oil, using heavy pot, salt and pepper. Remove from pot; add onions, celery and garlic, brown slightly. Then add rice for number of people you are serving. Brown. Replace chicken in pot with onion. Add water to cover. Bring to boil, reduce heat. Place lid on pot and cook at low heat until water is gone.
