CHEF'S POTATO SALAD 
1 (12 oz.) pork-ham luncheon meat, diced or cut in sticks
3 c. diced, cooked potatoes
3/4 c. diced American cheese
1 c. diced celery
1/3 c. chopped onion
1/2 tsp. salt
Pepper
Garlic
2 hard cooked eggs, quartered

SPECIAL MAYONNAISE:

3/4 c. mayonnaise
1 tsp. chopped parsley
1 tsp. chopped onion
1 tbsp. vinegar

Combine all salad ingredients, except garlic and egg quarters. Rub salad bowl with garlic. Prepare mayonnaise by combining mayonnaise, parsley, onion and vinegar; blend. Toss salad with special mayonnaise. Garnish with egg quarters.
