MOM'S PINEAPPLE RICE | |
My mother always made this for special occasions. 1 cup dry rice 1 (20 oz.) can crushed pineapple or tidbits 2 eggs 2 tbsp. sugar 1 (16 oz.) carton heavy whipping cream (or you can use Cool Whip) Cook rice as directed on package until tender. Drain and rinse rice in cold water. Drain pineapple and save the juice for mixture below. Mix eggs, sugar and pineapple juice and cook mixture until thick. Stirring frequently. Let cool and add to rice. Add crushed pineapple to rice. When ready to serve make whipped cream or use Cool Whip and add to rice mixture. May be used for dessert or side dish.
