1 1/2 c. sugar
1/2 c. shortening or butter
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
3 or 4 mashed bananas
4 tbsp. buttermilk
1 tsp. vanilla
1/2 c. nuts, optional

Mix by hand! Cream sugar and shortening; add dry ingredients alternately with the buttermilk, vanilla and bananas. Makes 30 cupcakes, or 4 to 5 very small loaves or several medium size loaves. I line the loaf pans with foil. Bake 45 to 50 minutes or until done. Cupcakes, less time.
