UNFINISHED SWEET CHUNKS 
1 tbsp. coarse salt
1/2 tsp. mixed pickling spice
1/4 tsp. alum
1 c. vinegar
1 c. cold water

Combine above ingredients and pour over 1 quart of pickling cucumbers which have been washed and packed in jar. Seal and let stand 6 weeks or more. When ready to use, cut in chunks. Heat liquid from jar with equal amounts of sugar. Boil, pour over the chunks. (I usually boil liquid and pour over chunks for about 3 days.) Add more vinegar and sugar if not enough to cover chunks.
