DATE ROLL 
3 c. sugar
3 tbsp. butter
1 c. chopped nuts
1 tsp. vanilla
1 c. evaporated milk
3 tbsp. light corn syrup
1 c. chopped walnuts

Combine sugar, milk, butter and corn syrup in medium saucepan over medium heat. Bring to a boil, stirring; add dates. Boil to soft ball stage (238 degrees on candy thermometer) or until a little in cold water forms a soft ball. Add walnuts and vanilla. Beat until thick, turn out on board; shape in 2 rolls, about 1 3/4 inches in diameter; wrap in wax paper. Place in refrigerator. Slice 1/3 inch thick and serve. Makes 2 1/4 pounds.
