ZUCCHINI BREAD 
2 sm. zucchini, trimmed & grated finely
1 carrot, finely grated
1 c. pecans, chopped
3 eggs
2 c. sugar
1 c. vegetable oil
1 tbsp. vanilla
1 c. whole wheat flour
2 c. all-purpose flour
1 tbsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1 c. raisins (opt.)

Beat eggs in large bowl until light and foamy. Add sugar, oil, zucchini, carrot and vanilla. Mix until well blended. Sift dry ingredients together. Gradually add dry ingredients until thoroughly mixed. Add pecans and raisins and mix until well blended. Pour into 2 greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans. Bake at 350 degrees for 45 to 60 minutes. Remove from pans and cool on wire racks.
