ITALIAN MELON ICE 
10 oz. melon balls
2 egg whites
2 tbsp. superfine sugar
1/8 tsp. salt

Put melon balls into blender. Puree at low speed starting and stopping blender frequently and scraping down sides of blender with rubber spatula. Add egg whites, sugar, salt and beat high speed 1 minute without stopping blender. Gradually add 3 cups crushed ice. Blend at high speed until mixture is smooth. Pour immediately into sherbet glasses. Serve with lemon wedges.
