CHEESE AND VEGETABLE BAKE 
1 (10 oz.) pkg. frozen mixed vegetables or 2 c. frozen loose-pack mixed vegetables
1 (5 1/2 oz.) pkg. dry scalloped potato mix
1 1/2 c. boiling water
2/3 c. milk
1 c. shredded Swiss cheese

Run hot water over frozen vegetables in a colander until separated. Place potatoes from scalloped potato mix in a 2 quart casserole; set aside.

Meanwhile, combine boiling water, milk and sauce mix from potato mix. Pour over potatoes. Stir in vegetables and cheese. Bake in a 375 degree oven for 40 minutes. Serves 6.
