OAT - HERB SODA BREAD 
1 1/2 c. whole wheat flour
1 c. unbleached flour
1 c. quick cooking oats
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. each basil, oregano, rosemary, thyme
2 tbsp. brown sugar
1/3 c. oil
1 1/2 c. buttermilk

Mix together dry ingredients. Crush herbs between fingers. Mix together oil and buttermilk and stir into dry ingredients enough to moisten well.

Turn dough out onto floured board and knead 10 times. Shape into a ball and place on a greased pie plate or 1 quart baking dish. Cut a cross in top to allow for expansion and even baking.

Place in a preheated 375 degree oven for 40-50 minutes or until a skewer inserted in center comes out clean. Cool slightly on a rack before slicing. Makes 1 loaf.
