AMY'S DELIGHT ICE CREAM PIE 
Vanilla wafers, crumbled
2/3 c. butter
2 c. powdered sugar
3 egg yolks, beaten
2 squares melted unsweetened chocolate
1/2 c. nuts (walnuts)
3 egg whites, beaten until stiff
1 tsp. vanilla
1 1/2 qt. mint chocolate chip ice cream, slightly melted

CRUST: Crumble vanilla wafers until covers 9x12 inch pan 1/4 inch deep.

FILLING: Cream butter and sugar. add egg yolks. Add chocolate and walnuts. Fold in egg whites and vanilla.

TOPPING: Spread ice cream on filling. Freeze at least 2 hours. Serves 12.
