10 oz. peeled raw potatoes 10 oz. cooked, mashed potatoes 16 oz. flour 1 tsp. bread soda 3 oz. melted butter or bacon fat Milk Salt & pepper to taste This is a very old Irish recipe which is associated with Halloween, All Hallows' Eve and All Saints Day. Grate the raw potato then drain off as much liquid as possible and set the liquid aside. Put the grated potato in a bowl and cover it with the cooked potato and set this aside. When the starch has settled to the bottom of the bowl of potato liquid, spill off the water and spread the starch evenly over the potatoes. Mix flour, bread soda, salt and pepper then add to potato mixture. Pour the melted fat on top and mix well, adding enough milk to make a pouring batter. Lightly grease a large pan then heat it. Pour small amounts of batter in pan and cook on both sides until golden brown. This is very good served with butter, salt and pepper to taste. |
