COUNTRY STYLE FISH 
2 lbs. fish fillets, cut into 6 pieces
1/3 c. vegetable oil (corn or soy)
1/4 c. vinegar
2 tbsp. capers or 1/2 c. chopped green onion
1 bunch fresh coriander (cilantro) or 1/2 tsp. dried (or substitute parsley)
Juice of one lemon
1 tsp. salt
1/2 tsp. pepper

Baste fish portions with lemon juice, salt, and pepper. Place fish in casserole dish. Mix capers or onions with vinegar, oil, and coriander. Pour over fish. Bake at 350 degrees for 20 to 25 minutes or until fish flakes easily with a fork.
