CRANBERRY MUFFINS | |
1 egg 1/4 c. salad oil 1 c. sugar 1/2 tsp. salt 1/2 c. milk 1 1/2 c. flour 2 tsp. baking powder 1 c. chopped cranberries Beat together slightly egg, milk and oil. Mix together dry ingredients (except cranberries). Add egg mixture to dry ingredients, barely combining, using not over 18 strokes to blend. Stir in cranberries. put muffin liners into aluminum muffin pan (not Teflon). Fill liners about 3/4 full. Bake 20 to 25 minutes at 400 degrees. Makes 1 dozen. These are so good that butter is not necessary. |
