MACADAMIA OATMEAL MACAROONS | |
1/2 c. butter 1/4 c. white sugar 1 tsp. vanilla 1 lg. egg 1 c. flour 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 c. oatmeal 1/2 c. sweetened, flaked coconut 1 c. Macadamia nuts Place shortening in a large mixing bowl. Add sugar and cream mixture. Add vanilla and egg. Mix well; set aside. In another mixing bowl, add all dry ingredients together, except Macadamia nuts; mix well. Add the dry ingredients to the large bowl containing the creamed items; mix well. Gently fold in the Macadamia nuts. Drop one tablespoon-sized cookie dough spoonfuls onto ungreased cookie sheet. Bake at 375 degrees for approximately 12 minutes. |
