PINA COLADA CHEESECAKE 
1 9" graham cracker crumb pie crust
8 oz. cream cheese, softened
4 oz. ricotta cheese, softened
7 oz. sweetened condensed milk
7 oz. pina colada mix
1 tsp. vanilla extract

In a large bowl beat the 2 cheeses until fluffy. Beat in sweetened condensed milk until smooth. Stir in pina colada mix and vanilla extract. Pour into crust. Refrigerate overnight or until set. Top with Cool Whip. Makes 6-8 servings.
