DOUBLE CHOCOLATE MINT CHIP
COOKIES
 
1 (10 oz.) pkg. (1 1/2 c.) mint flavored semi-sweet chocolate morsels, divided
1 1/4 c. all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 c. butter, softened
1/2 c. firmly packed brown sugar
1/4 c. sugar
1/2 tsp. vanilla extract
1 egg
1/2 c. chopped nuts

Preheat oven to 375°F. Melt over hot (not boiling) water 3/4 cup flavored semi-sweet chocolate morsels; stir until smooth. Set aside.

In bowl, combine flour, baking soda and salt; set aside.

In bowl, beat butter, brown sugar, sugar and vanilla extract until creamy. Add melted morsels and egg; beat well. Gradually blend in flour mixture. Stir in remaining morsels and nuts. Drop by rounded measuring tablespoonfuls onto ungreased cookie sheets.

Bake at 375°F for 8 to 9 minutes. Allow to stand 2 to 3 minutes before removing from cookie sheets; cool completely.

Makes about 1 1/2 dozen cookies.
