PASTA WITH CLAM SAUCE | |
2 c. spaghetti or linguini, broken into 2 inch lengths, 4 oz. 1 1/2 qt. water 1 tbsp. vegetable oil 1/4 c. chopped onion 2 tsp. minced garlic clove 1/2 c. chopped parsley 1/2 tsp. oregano 1/16 tsp. pepper 1 (6 1/2 oz.) can minced clams 2 tbsp. white wine or water 1 tbsp. grated Parmesan cheese Cook spaghetti in boiling water according to directions on box. Saute onions and garlic in oil about 2 minutes. Add parsley, oregano, pepper, and juice drained from clams. Add wine and simmer about 5 minutes. Add clams and heat 1 minute. Drain spaghetti. Add to sauce and toss until mixed. Sprinkle each serving with Parmesan cheese. Serves 2. Recipe may be doubled. |
