CARAMEL CRISP COOKIES 
2 c. brown sugar
1 c. shortening
2 eggs
3 c. flour
1 tsp. baking soda
1 tsp. cream of tartar
1/2 tsp. ginger
1/2 tsp. salt
1 tsp. lemon extract

Mix ingredients and roll into small balls. Press down with fork. Bake on cookie sheet at 350 degrees for about 8-10 minutes.
