CARROT AND RAISIN SALAD 
20 lbs. shredded carrots
5 lbs. raisins
1/2 gallon mayonnaise

Soak raisins in warm water for 1 hour. Drain and mix well with carrots. Mix mayonnaise with salad. Portion with #8 scoop. Yield 100 (4 ounce) portions.
