MARINATED CUCUMBER SALAD 
2 c. cucumbers, thinly sliced
1 medium onion, cut in rings
2 c. carrots, thinly sliced
1/2 c. celery, sliced

MARINADE:

1 c. vinegar
1/4 c. vegetable oil
3/4 c. sugar
1 tsp. celery seed
1 tsp. salt
1/4 tsp. pepper

Combine vegetables together in a shallow bowl. Set aside. Combine marinade ingredients, mixing well. Pour over vegetables, tossing lightly. Cover and chill 8 hours. Drain and serve in lettuce lined bowl.
