SUMMER SAUSAGE 
5 lb. hamburger
1/4 c. Morton tender quick curing salt
2 tsp. hickory salt or smoke salt
2 1/2 tsp. coarse ground pepper
2 1/2 tsp. mustard seed
2 tsp. garlic salt
1/4 c. brown sugar

Mix well. Refrigerate in a covered bowl 3 days. Form into 5 rolls. Place on rack of broiler pan and bake at 150 degrees for 15 to 17 hours. Freeze well.

Ground venison works well.
