PEANUT BUTTER BROWNIES 
1/2 c. peanut butter
4 tbsp. (1/2 stick or 1/4 c.) butter, softened
1 c. brown sugar
1 tsp. vanilla extract
2 eggs
2/3 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. chopped salted peanuts

Preheat the oven to 350 degrees. Grease an 8" square baking pan. Combine the peanut butter and butter in a mixing bowl and beat until smooth and well blended. Add the brown sugar and vanilla and beat well, then add the eggs and beat until the mixture is light and fluffy. Combine the flour, baking powder and salt, then stir and toss them together. Add to the first mixture and beat until completely mixed. Stir in the peanuts. Spread the batter evenly in the pan and bake for 25 to 30 minutes or until the top appears dry and a toothpick inserted in the brownies comes out barely clean. Yield: 16 brownies.
