RHUBARB CUSTARD PIE | |
3 c. rhubarb 3 eggs, separated 1 c. sugar 2 tbsp. flour 3/4 c. Half & Half 1 unbaked pie shell Pour boiling water over rhubarb for 5 minutes - drain. Put rhubarb into pie shell. Beat together 3 egg yolks, sugar, flour and the Half & Half. Pour this over the rhubarb. Bake about 1 hour at 350 degrees. Cover with meringue made from the egg whites and brown in the oven. |
