CAFETERIA CAJUN CREATION | |
1 lb. red kidney beans, cooked 3 lb. smoked sausage, cut into 1 inch lengths (like coins), brown in oven or microwave to reduce grease 1/2 stick butter 1 lg. onion, chopped 1 button garlic, chopped 1 c. catsup 2 tbsp. vinegar 1 tbsp. mustard 1 tbsp. chili powder 1 tsp. garlic salt 1 c. brown sugar Salt, pepper and Cajun seasoning to taste Saute butter, onion and garlic. Add catsup, vinegar, mustard, chili powder, garlic salt, brown sugar, salt, pepper and Cajun seasoning. Simmer. Add beans and sausage and simmer until ready to eat. Can be put into a crock pot. Serve over beds of rice. |
