1 1/2 c. oil
2 c. sugar
3 eggs
3 c. flour
1 tsp. salt
1 c. walnuts
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. vanilla
3 c. apples, peeled, cored and coarsely chopped
1 c. raisins

Preheat oven to 350 degrees. In a large bowl, mix oil and sugar. Beat in eggs. In a separate bowl, mix flour, salt, cinnamon and soda. Add to the egg mixture, add vanilla and beat together well. Stir in apples, raisins and nuts. Bake for 50 to 60 minutes until cake tests done. Cool in the pan for 10 minutes then turn out onto a cooling rack to continue cooling. Serve slightly warm or thoroughly cooled.
