PEACH COBBLER 
4 c. fresh peaches (7 or 8), pared and sliced
1 tbsp. lemon juice
1/3 to 1/2 c. granulated sugar
1/8 tsp. nutmeg
2 tbsp. melted butter

TOPPING:

1 c. cake flour, sifted
1 1/2 tsp. baking powder
1 tbsp. granulated sugar
1/2 tsp. salt
1/4 c. shortening
1 egg, beaten
1/4 c. milk
1/4 tsp. cinnamon
1 tbsp. granulated sugar

Heat oven to 350 degrees. Combine the peaches, lemon juice, sugar, nutmeg, and butter. Place the ingredients in a greased 12 x 8 x 2 inch pan. Then sift the flour, baking powder, 1 tablespoon granulated sugar, and salt. Work in the shortening with a pastry blender until it looks like cornmeal. Stir in egg and milk with a fork. Spread thinly over peaches.

Combine sugar and cinnamon; spread evenly over peaches. Bake at 350 degrees for 40 minutes or until crust is tender. Serve warm with whipping cream, ice cream, or hard sauce. Yield: 6 servings.
