CARROT CAKE II 
2 c. sugar
2 tsp. baking soda
1 tsp. salt
3 c. carrots, grated
4 eggs
2 c. flour
2 tsp. cinnamon
1 c. Wesson oil
1/2 c. coconut

Sift dry ingredients. Add oil and beat. Add eggs. Beat. Add carrots and coconut. Put into a 9 x 13 inch pan. Bake at 350 degrees for 35 to 45 minutes.

ICING:

3 oz. cream cheese
1/2 box 10X sugar
1/2 stick butter
1/2 tsp. vanilla
