3 whole chicken breasts, skinned & boned 1 egg 3/4 c. Parmesan cheese 3/4 c. dry white wine 1/4 c. butter Cut chicken into 1 1/2 inch pieces and set aside. Mix eggs and milk in a bowl. Dip chicken pieces in egg mixture and dredge in grated Parmesan cheese. Melt butter in a non-stick electric skillet. Add chicken and cook until lightly browned on each side. Sprinkle remaining cheese over chicken. Add wine, cover. Reduce heat and simmer 35 minutes. Remove cover and simmer 10 minutes. |
