SAUSAGE AND CHEESE CASSEROLE 
1 lb. hot sausage
3/4 c. chopped onion
6 eggs, slightly beaten
1/3 c. evaporated milk
1/4 tsp. salt
1 box (7 1/2 oz.) tortilla chips
3 c. shredded Cheddar cheese
3/4 c. chopped tomato
12 oz. picante sauce

Cook sausage and onion in skillet, drain reserving 1 tablespoon fat. Remove from skillet and set aside. Preheat oven to 350 degrees. In reserved fat, cook combined eggs, milk and salt, stirring occasionally until set. In an 13 x 9 baking dish layer tortilla chips, sausage mixture, half of picante sauce, cheese. layer ingredients again. Bake 15 to 20 minutes until hot. Garnish with tomato on top.
