SHEPHERD'S PIE 
1 c. chopped onion
1/2 c. chopped celery
1 tbsp. butter
1 lb. Eckrich cheese smoked sausage, sliced and quartered
1 (10 1/2 oz.) can beef gravy
1 (10 oz.) pkg. frozen peas
2 c. mashed potatoes
2 tbsp. chopped parsley
2 tbsp. butter

Saute onion and celery in butter 3 to 5 minutes. Stir in sausage, gravy and peas. Season with salt and pepper. Pour into 9 inch deep dish.

Combine mashed potatoes and parsley. Spoon around edge of pan. Dot with butter and sprinkle with paprika. Bake in a preheated oven 350 degrees for 35 minutes. 4-6 servings.

Optional: Add sour cream to mashed potatoes.
