CHICKEN SALAD 
1 chicken
2 tbsp. salad oil
2 tbsp. orange juice
2 tbsp. vinegar
1 tsp. salt
1 c. mandarin orange sections
1 c. pineapple tidbits
1 c. green grapes
1 c. slivered almonds, toasted
1 c. diced celery
1 c. raw rice
2 c. mayonnaise

Cook chicken until tender. Remove meat from bones and cube. Mix together salad oil, orange juice, vinegar and salt. Marinate chicken in this (in the refrigerator). Then add the fruits, nuts and celery. While chicken is marinating, cook rice until tender, add rice to salad. Toss with the mayonnaise. 12 servings.
