APPLE CIDER ROLLS 
2 1/4 c. apple cider
1 c. sugar
1 1/2 tsp. cinnamon
2 c. flour, unsifted
2 1/4 tsp. baking powder
1 tsp. salt
1/2 c. butter
3/4 c. milk
4 tbsp. soft butter
1/4 c. sugar
1 c. chopped walnuts
1 1/2 tsp. cinnamon
1 c. coconut
1 c. walnuts

Combine cider, sugar and cinnamon in pan and cook over medium heat until sugar is dissolved. Bring to a slow boil and cook 15 minutes.

Meanwhile, combine flour, baking powder and salt in bowl. Cut in 1/2 cup butter until mixture resembles coarse crumbs. Stir in the milk to make a dough. Turn onto floured board and knead lightly to make an even ball of dough. Roll out dough to make a 12x16 inch rectangle.

Combine the 1/4 cup sugar. Add the 1 1/2 teaspoons cinnamon. Spread the dough with the 4 tablespoons of soft butter and sprinkle evenly with the mixture of cinnamon and sugar. Lift one end of rectangle and roll up. Cut roll into slices about 3/4 inches thick. Pour apple cider syrup into a buttered 9x13 inch pan. Arrange the pinwheels cut side down in the syrup. Bake 30-40 minutes at 375 degrees or until golden brown. Serves 6 to 8.
