APPLE BUTTER CAKE 
1 c. sugar
3 eggs
2 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 c. sour milk or buttermilk
1 recipe of 7 Minute Frosting
1 c. shortening
1 c. apple butter
1 tbsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
6 tbsp. apple butter

In bowl cream sugar and shortening together. Beat in eggs one at a time. Beat until light and fluffy. Stir in 1 cup apple butter. Sift together the flour, baking powder, soda, salt, cinnamon and nutmeg. Add dry ingredients to creamed mixture alternately with sour milk.

Turn batter into two greased and lightly floured 9 x 1 1/2 inch round baking pans. Bake at 350 degrees for 30-35 minutes. Cool 10 minutes. Remove from pans and cool on wire racks.

Spread bottom layer of cooled cake with 4 tablespoons of remaining apple butter. Top with 1 cup Seven Minute Frosting, spreading evenly to cover apple butter. Cover with top layer. Frost sides and tops. Swirl remaining 2 tablespoons apple butter into frosted top to give a marbled effect.
