JOLLOFF RICE WITH MEAT OR
CHICKEN
 
2 lbs. meat or chicken
6 tomatoes
1 lg. onion
Cooking oil
2 c. rice
Salt and pepper to taste
5 c. water

1. Prepare the chicken or meat and cut into pieces.

2. Fry in hot oil.

3. Put into saucepan, add water and salt, cover and place on stove.

4. Prepare and slice the onions, blend the tomatoes and pepper. Fry and add to the meat or chicken.

5. Wash the rice, and add when the meat is almost tender.

6. Boil for about 10 minutes, then reduce the heat and simmer until both the meat and rice are cooked.

7. Add the seasoning.

N.B. Stir frequently to avoid burning and keep lid on all the time. Enough for 6 people.
