PANCIT 
1/2 pkg. rice noodles (found in Korean store)
3 carrots, cut in 1/2 in. sticks thin
1/2 onion, diced small
1/2 head white cabbage, cut in 1/2 in. pieces
2 stalks celery, cut 1/2 in. thin
1 lb. chicken cutlet, cut in small thin pieces
1/2 stalk broccoli, cut in 1/2 in. thin pieces
4 cloves garlic, cut in small pieces
Soy sauce

Stir fry vegetables in olive oil, then put aside. Add more olive oil to pan or wok with garlic cloves and cook chicken until done. Take out and put aside. Fill pot or sink with warm water, break pancit rice noodles in pieces and sub merge in the warm water for 10 minutes or until very soft. Then add the noodles to the pan and cook, you might have to add more water for it is quickly absorbed, then add chicken and vegetables to pan and add lots of soy sauce to taste. Yield: 8 servings.
