CHOP SUEY | |
2 tbsp. butter 3/4 lb. beef, cut in cubes 3/4 lb. pork, cut in cubes 1/8 tsp. black pepper 1 c. hot water 2 tbsp. butter 2 c. diced onion 2 c. diced celery 1/2 c. chopped green pepper 1/4 c. cornstarch combined with 1/4 c. cold water Melt butter in large frying pan; add meat and brown on all sides. Season meat with black pepper. Transfer meat into large saucepan; add 1 cup hot water and cook until tender, about 1 hour, stirring occasionally. Melt remaining butter in saucepan and add onions, celery and 2 tablespoons water. Simmer, about 15 minutes. When vegetables are tender add to meat; add cornstarch combined with water. Cook until thickened, about 10 minutes. Serve over unsalted rice. Makes 8 servings. |
