BANANA CAKE 
3 c. cake flour, sifted
2 tsp. baking soda
1 c. lard
2 c. sugar
3/4 c. milk
2 eggs, slightly beaten
1 1/2 c. ripe bananas, mashed (3 to 4 med. size)

Line bottom of 3 (9-inch) cake pans with waxed paper. Sift together flour and baking soda. Cream lard thoroughly. Add sugar gradually and cream until light and fluffy. Add 2 tablespoons milk, then eggs. Add dry ingredients and remaining milk, alternately beating thoroughly after each addition. Fold in mashed bananas and pour into cake pans. Bake in moderate oven (350 degrees) for 25 to 30 minutes.
