ROLLED OATS COOKIES 
3/4 c. shortening
1 1/2 c. white sugar
2 eggs
2 big tbsp. of molasses
2 c. flour
1 c. rolled oats
1 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 c. seedless raisins
1 c. English walnuts

Cream shortening and sugar, add eggs and molasses and mix well. Combine remaining ingredients. Bake at 375 degrees for 10 to 12 minutes. This is not a soft cookie recipe.

DIETITIAN'S NOTE:

This recipe will satisfy that reach for the cookie jar and contribute to your day's fiber intake as well. You can spare yourself some calories and fat by reducing the sugar to 1 cup and omitting the walnuts. To reduce further, use 1/2 cup egg substitute, 1/4 cup shortening and 1/2 cup stick butter.
