BEST BRAN MUFFINS 
1 1/2 c. wheat bran cereal
1 c. milk
1 egg
1/3 c. soft shortening
1 1/2 c. sifted all-purpose flour
1/2 c. sugar
3 tsp. baking powder
1 tsp. salt

Preheat oven to 400 degrees. Combine cereal and milk in bowl. Let stand 2 minutes or until most of the moisture is absorbed. Add egg and shortening. Beat until well blended.

Sift together the flour, sugar, baking powder and salt. Add dry ingredients to cereal mixture and stir just until all are moistened. Spoon batter into oiled muffin cups (3/4 full) and bake 25 minutes or until lightly browned.

NOTE: You may add nuts, raisins or coconut or any combination of these as you wish. Yield: 12 muffins.
