CURRIED CHICKEN | |
4 lb. chicken 2 minced onions 5 tbsp. oil 1/2 minced garlic clove 1 tbsp. flour 3 tbsp. curry powder 2 c. stock 2 tbsp. soy sauce 2 tbsp. sugar 1 tsp. salt 2 star anise seeds 1 lb. potatoes, peeled and quartered Remove bone from chicken. Use bones to make soup stock. Saute onion in 2 tablespoons oil until brown. Heat remaining oil in another pan and fry garlic 1 minute. Add ginger, onion, flour and curry powder. Keep stirring a minute on low heat. Add chicken and raise heat to moderate heat, stir constantly for 1 minute. Add stock, soy sauce, sugar, salt and anise seeds. Cover pan and simmer 30 minutes. Add potatoes and simmer another 30 minutes. |
