BASIC OATMEAL MUFFINS 
3 c. oats
3 c. buttermilk

Mix together and let stand for one hour.

Preheat oven to 400 degrees.

3 eggs
1/2 c. apple juice concentrate, thawed
2/3 c. brown sugar
2 tsp. baking powder
1/2 - 1 tsp. salt (do not omit, tastes funny)
1/2 c. corn oil
3 c. flour
1 1/2 tsp. baking soda

Mix eggs, oil, apple juice and brown sugar. Add to oat mixture trying not to over mix so oatmeal doesn't smooth out. Add remaining ingredients, mix by hand. Fill baking cups 1/2 full. Bake 18 to 25 minutes. (I use Texas size tin.)

VARIATIONS: 12 ounces chocolate chips and 1 cup pecans or 1 cup raisins and 1 1/2 teaspoons cinnamon.
